Grandma Helen's Favorite Recipe; Oatmeal Cake
(from Grandma Book, Helen Rourke Nemechek Schaben

9x13 pan that is greased and floured.
Preheat oven to 350* oven.  Bake 35 minutes

1 3/4 c. boiling water
1 c. oatmeal
1/2 c. butter
1 c. sugar
1 c. brown sugar
1 tsp. soda
1 tsp. baking powder
1 tsp. Vanilla
2 eggs
1 1/3 c. flour
½ tsp. Salt
1 tsp. Cinnamon

Pour water over oatmeal and let stand 20 minutes.  Cream butter and sugars. Add eggs and vanilla. Beat. Add dry ingredients. Mix until blended. Bake.
Topping:

½ c. butter
1 c. brown sugar
1 small can evaporated milk
1 c. coconut
1 c. nuts

Mix and pour over cake. Put under broiler until bubbly.

Note: Helen stated Grandma Nemechek taught her to make this recipe as it was a favorite not only of her husband, but the entire family.

2 lbs. beef
2 lbs. sausage
1 large onion
¾ cup rice
2 tsp. salt

Mix ingredients together. Place a small roll of meat into cabbage leaves which has been in boiling water to soften. Fold cabbage around meat and place in kettle which you have put a layer of sauerkraut. Layer cabbage rolls and kraut till all added. Pour 1 cup water over top and steam until done: about 2 hours.

Darsha's Favorite Ginger Cookies: (Darsha Whorton)
These are also from my childhood. My Grandma Darlene Burbach would bake several batches of cookies and load them all into an ice cream bucket and send them to the farm with Grandpa Warren. She always included these cookies. They quickly became my favorite. As with the muffins I would request these oh so soft cookies.

Darsha's Favorite Ginger Cookies:
1 c. butter
1 1/2 c. Brown suger
2 eggs
3/8 c. molasses
3 tsp. baking soda
3/4 tsp. cloves
1 tsp. cinnamon
1 1/2 tsp ginger
3 1/2 c. flour
sugar to dip cookie balls in

Cream butter, brown sugar, and eggs together. Mix in molasses. Sift together flour, soda, cloves, cinnamon, and ginger. Add to creamed mixture. Chill about 30 minutes. Form small balls and roll in sugar. Place balls on cookie sheet and flatten. Bake at 350 for 8 minutes. Do not over bake (they are best soft). Remove from cookie sheet at once.
Cinnamon Muffins (Breakfast): from Darsha Whorton
These are my favorite breakfast item. When I was young my mom made these for us kids before school. When I got older and she went to school Dad took over breakfast duty. He would ask me what I wanted for breakfast and I would say 4 out of the 5 days I would ask for Cinnamon Muffins. He didn't try to make them, as I remember, for a while. However, when he did I was in heaven. To this day Cinnamon Muffins are my favorite breakfast item.

Cinnamon Muffins:
2 c. whole-wheat flour
1/2 c. raw sugar (I use sucanat)
2 1/4 tsp. baking powder
1/3 c. butter
1 egg, beaten
2/3 c. milk
Filling:
1/2 c. brown sugar
1/4 c. chopped nuts, optional
2 tsp. cinnamon
2 T. butter, melted

Stir flour, sugar and baking powder together. Cut in butter until mixture appears sandy. Mix in egg and milk. Stir just until moistened. For filling: mix brown sugar, nuts, cinnamon, and butter. Divide 1/2 of the batter in 12 greased muffin cups, filling each about 1/3 full. Sprinkle filling mixture over batter and top each muffin with remaining batter.
